Crunchy Radicchio Salad

This simple salad makes a great lunch. Quick, easy and most of all delicious


This salad can be made using cupboard ingredients and swapped out with whatever you have to hand. croutons can be swapped for some toasted nan bread. Apples can be changed out for for pears or even grapefruit segments for a citrus kick. Today, I used a soft herb cheese but this also works well with a goat cheese, or other soft cheese like boursin. For the nutting crunch, walnuts can be used instead of pecans or even some pumpkin seeds.


Crunchy Radicchio Salad

Serves: 4 Time: 15


Ingredients

  • 50g (1/2 cup) pecans

  • 1 tbsp Dijon mustard

  • 1 1/2 tbsp apple cider vinegar

  • 80ml (1/3 cup) extra virgin olive oil

  • 2 radicchio, trimmed and broken into leaves

  • 2 apples, crisp variety (granny smith work well), cut into matchsticks

  • 2 spring onions, thinly sliced

  • 60g soft cheese

  • 2 handfuls of croutons

Directions

  1. Add pecans into a small pan and toast for 3.-4 min until the are warm. Shaking often to ensure they do not burn.

  2. Make the dressing by adding mustard and vinegar in a small bowl, season with salt and pepper, and whisk to combine. Gradually whisk in oil until incorporated.

  3. Place radicchio, apples, onions and pecans in a large bowl. Top with croutons and dot with soft cheese. Add dressing and toss to combine.
