Creamed Kale

This is a great recipe to incorporate into your main meals. Kale is very high in nutrients and very low in calories, making it one of the most nutrient-dense foods on the planet.

Creamed Kale

Serves: 2 Cooke time: 15min


  • Salt

  • 500g kale, center stalks removed, leaves sliced in 1/2-inch ribbons

  • 2 tablespoons unsalted butter

  • 1 shallots, thinly sliced

  • 1/2 tin of coconut milk

  • 1/4 cup grated Parmesan

  • pinch of freshly ground nutmeg

  • pinch of ground black pepper


  1. Bring a large pot of water to a boil.

  2. Add 2 tablespoons salt to the boiling water and then add the kale. Blanch the kale until tender, 5 to 7 minutes.

  3. Prepare an ice water bath, using a medium sized bowl full of ice and water. Rinse in the ice water bath. Drain well to remove all the liquid.

  4. Set a large sauté pan over medium heat. Melt the butter, add the shallots and saute until translucent.

  5. Then add the kale, coconut milk, cheese and nutmeg. Reduce the heat to low and cook until the coconut milk has reduced and thickened, 5 to 7 minutes.

  6. Season with salt and pepper.
