Huevos Rancheros with Kale

If you're tired of a typical fry up breakfast look no further than this huevos rancheros recipes to spice up your morning. With the added benefit of fresh kale from the seasonal veg boxes!


Huevos Rancheros with Kale

Serves: 1 Cook time: 10 min


  • 2 small wraps or 1 large

  • 2 eggs

  • 3 Tablespoons of black beans

  • 3 Tablespoons of salsa (medium or hot)

  • Grated handful of your favourite melty cheese (cheddar, red Leicester, mozzarella, spicy chili work well)

  • Large handful of kale

  • 1/2 teaspoon garlic powder

  • Salt & Pepper to taste

  • Crushed chili flakes (optional)

  • Chives / Spring onion to garnish


  1. Whisk 2 eggs and season with salt & pepper. (chili flakes optional).

  2. On a low heat cook eggs until they start to set and push to one side of the pan.

  3. On the other side of the pan place washed kale with garlic powder and start to cook until they get darker in colour and are softened.

  4. Whilst eggs and kale are cooking, place wraps on a small burner to warm and char slightly (as shown in the photo, no more than 20 seconds on each side).

  5. Place the warmed wraps on a plate, top with the scrambled eggs and kale.

  6. In the same warm pan add 3 tablespoons of black beans and salsa. Cook until warmed through and beans are softened. Place mixture on top of the kale and eggs.

  7. Sprinkle with grated cheese and chives or spring onions (from your veg box).
