These quick and easy fritters are a great snack, starter or addition to your next BBQ now that the weather is getting
Sweetcorn and Spring Onion Fritters
Serves: 10-12 Fritters Cook/Prep: 10-20min
Ingredients
300g sweetcorn
3 spring onions, very finely chopped
3 eggs
30ml milk
75g plain flour
½ tsp cayenne pepper
vegetable oil, for frying
salt and freshly ground black pepper
sweet chili sauce or sour cream (optional topping/dip)
Directions
Directions should always be short and to the point.
Put the sweetcorn and spring onions in a bowl.
Season with salt and pepper.
Sieve the flour with the cayenne pepper and then stir into the sweetcorn mixture.
Add the eggs and milk and mix to combine into a batter
Add the oil to a large frying pan – you need to shallow fry these, so make sure the base of the pan is well covered.
Heat the oil then test by adding a tiny bit of the batter – it should immediately start bubbling around the edges when it hits the oil.
Using a small ladle, drop batter onto the oil – you need around 2 tbsp of mixture per fritter. Fry for a couple of minutes on one side until light brown then turn over and cook for a further minute.
Turn out onto kitchen paper to remove any excess oil and keep warm in a low oven. Continue until you have used all the batter.
Top with sweet chili sauce for a kick or a dollop of sour cream for a savory profile. Garnish with extra spring onion.
