Sweetcorn and Spring Onion Fritters

These quick and easy fritters are a great snack, starter or addition to your next BBQ now that the weather is getting

Sweetcorn and Spring Onion Fritters

Serves: 10-12 Fritters Cook/Prep: 10-20min


  • 300g sweetcorn

  • 3 spring onions, very finely chopped

  • 3 eggs

  • 30ml milk

  • 75g plain flour

  • ½ tsp cayenne pepper

  • vegetable oil, for frying

  • salt and freshly ground black pepper

  • sweet chili sauce or sour cream (optional topping/dip)


Directions should always be short and to the point.

  1. Put the sweetcorn and spring onions in a bowl.

  2. Season with salt and pepper.

  3. Sieve the flour with the cayenne pepper and then stir into the sweetcorn mixture.

  4. Add the eggs and milk and mix to combine into a batter

  5. Add the oil to a large frying pan – you need to shallow fry these, so make sure the base of the pan is well covered.

  6. Heat the oil then test by adding a tiny bit of the batter – it should immediately start bubbling around the edges when it hits the oil.

  7. Using a small ladle, drop batter onto the oil – you need around 2 tbsp of mixture per fritter. Fry for a couple of minutes on one side until light brown then turn over and cook for a further minute.

  8. Turn out onto kitchen paper to remove any excess oil and keep warm in a low oven. Continue until you have used all the batter.

  9. Top with sweet chili sauce for a kick or a dollop of sour cream for a savory profile. Garnish with extra spring onion.
